Next they brought out our first course, a chicken enchilada garnished with radishes (which I didn't particularly prefer). I had decided ahead of time that I was NOT going to be gluten intolerant for the banquet, so I enjoyed that enchilada. Very much. Next came the main course: steak, mashed potatoes formed into a lovely swirl, and colorful steamed veggies. Again, yummm. I am disappointed to say that I was unable to finish the steak, partly because my stomach is small, and partly because my body did not agree that being gluten tolerant was a good idea. I probably should have consulted my body when I made that decision. Lesson learned.
Dessert...eclairs in the shape of swans. Uh huh. There's a picture below this. Not only were they shaped incredibly, they tasted DIVINE! Somehow the fact that my stomach had already punished me for eating the previous gluten didn't phase me. I downed those eclairs very quickly. You would've too, because nothing compares.
After the food came the tears. We heard sentimental speeches, beautiful musical numbers, and watched a moving slideshow. The slideshow was what really got to me. We saw pictures of the children who we love so much, and coupled with the music I couldn't help but be emotional. And I still have two and a half months left! Sigh...I love my kids so much.
I'm going to miss Ash, Abbey, and Katie very much! They are wonderful girls who have made this experience so memorable. I hope they have a great time in the Amazon being jungle women for a few days. They better bring me home a Tarzan, and a hot one at that. Love you girls!
